Cheeses like parmesan and romano are lower in fat but ricotta and cheddar can also be found in low fat versions. If you're looking for higher protein in your diet, then you should stick with swiss, mozzarella, or provolone. Cheeses like swiss, monterey jack, and parmesan are naturally lower in sodium if that is a concern for you.
